Carrot Oatmeal Moringa Muffins
Soft, lightly sweet, and the one you keep asking for.

Ingredients
6 moringa capsules, opened
1½ cups rolled oats, blended into flour
½ cup rolled oats, left whole
1 tsp baking powder + ½ tsp baking soda
1½ tsp cinnamon + a pinch of salt
2 eggs + ½ cup Greek yogurt
⅓ cup maple syrup + ¼ cup melted coconut oil
1½ cups finely grated carrot
⅓ cup chopped walnuts or raisins
Method
Heat the oven to 350°F / 175°C and line a 12-cup muffin tin.
Mix the dry ingredients and empty in the capsules. Whisk the wet ingredients in another bowl.
Combine, fold in the carrot and walnuts, and fill each cup ¾ full.
Bake 20–22 minutes, until a toothpick comes out clean. Cool 5 minutes in the tin.
Why it works: Oats bring beta-glucan fiber, yogurt and eggs add protein, and carrots add beta-carotene, so these keep you full far longer than a bakery muffin. The oven costs moringa some vitamin C, but its fiber, iron and calcium stay.

Ingredients
4 moringa capsules, opened
¾ cup sunflower seed butter (or almond butter)
⅓ cup maple syrup
1 egg
⅓ cup raw cacao powder
1 tbsp ground flaxseed
¼ tsp baking soda + a pinch of salt
⅓ cup dark chocolate chips (70%+)
2 tbsp pumpkin seeds, to top
Method
Heat the oven to 350°F / 175°C and line an 8×8 in (20 cm) pan.
Stir the seed butter, maple and egg until glossy.
Empty in the capsules, add cacao, flax, soda and salt, then fold in the chips.
Spread, top with seeds and bake 18–20 minutes. Cool completely before cutting.
Why it works: The fudge comes from seeds, not flour. Sunflower and pumpkin seeds bring healthy fats, magnesium and zinc, and flax and cacao add fiber your gut bacteria feed on.
Steep the ginger in hot water for 5 minutes, then let it cool until comfortably warm.
Empty in the capsules with the honey and whisk until smooth.
Squeeze in the lemon last and sip slowly.
Why it works: Warm water rehydrates you after the night. Moringa brings plant iron, which helps reduce tiredness, and lemon’s vitamin C helps your body absorb it. Adding the lemon last keeps more of that vitamin C.

Ingredients
2 moringa capsules, opened
1 cup plain kefir
1 small banana (slightly green)
2 tbsp rolled oats
1 tbsp chia seeds
½ inch fresh ginger
A handful of spinach + ice
Method
Pour in the kefir, then empty the capsules over it.
Add everything else and blend 45–60 seconds until silky.
Drink right away, or chill 10 minutes to let the chia thicken it.
Why it works: Kefir brings live cultures; oats, chia and a slightly green banana bring the fiber they feed on. Moringa adds more fiber and polyphenols, and ginger helps settle digestion.
Whisk the milk, capsule powder, maple and vanilla. Stir in the chia, rest 5 minutes, stir again and chill overnight.
Warm the berries with lemon for 3–4 minutes and mash into a quick jam. Let it cool.
Layer pudding and jam, then top with walnuts.
